Chocolate Soufflé (Heaving Chocolate Bosum)
from Erica...Preheat oven to 325
Melt choc...cool to room temp (8 oz bitter or semi)
Beat yolks (6) with elec mixer until thick and light. beat in sugar
(1/2) 1 tablespoon @ a time...add choc and 1 tsp vanilla.
beat whites (6) until foamy add cream of tartar(1/8 tsp) .Beat in 2
tbls sugar gradually. Get white shiny peaks! Fold 1/4 into choc
mix.....gently mix in remaining whites until blended
Pour into lightly buttered 8" springform pan....smooth out..bake until
puffed and firm 35-40 min. Cake will fall while cooling.....
Serve with whipped cream
